Apple-Cranberry-Nut Cake

Ingredients for 1 servings:

  • 3 eggs
  • 170 g sugar
  • 1 packet of vanilla sugar
  • a little lemon zest
  • 130 g oil
  • 150 g natural yogurt, 3.5% fat
  • 300 g flour
  • 1 packet of baking powder
  • 1 tsp cinnamon
  • 200 g sweet and sour apples, crumbly, finely chopped
  • 50 g cranberries, dried, sweetened
  • 50 g almonds or walnuts, chopped
  • n. B. Icing sugar for dusting

Instructions

Working time approx. 15 minutes; Rest time approx. 1 hour; Cooking/baking time approx. 1 hour; Total time approx. 2 hours 15 minutes

Quickly stirred loaf cake, also suitable for spelt flour

Whisk together the eggs, sugar, vanilla sugar, and lemon zest. Add the oil and natural yogurt and continue stirring. Add the sifted flour, baking powder, and cinnamon. Blend everything into a smooth batter. Finally, add the chopped apples, cranberries, and chopped almonds or walnuts and mix. Bake the cake in a loaf pan lined with baking paper at 170°C (top/bottom heat) for about 1 hour, then let it cool on a wire rack. Dust with powdered sugar, if desired.
