Stuffed tomatoes with minced meat

Ingredients for 4 servings:

  • 8 beefsteak tomatoes
  • 250 g minced meat
  • 1 small onion(s)
  • salt and pepper
  • 200 g mozzarella, grated
  • basil
  • chili powder
  • 6 tsp vegetable broth
  • 3 tsp crème fraîche

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Wash and dry the tomatoes, cut off the tops, and carefully scoop out the seeds. Collect the tomato paste in a bowl. Place the tomatoes next to each other in a baking dish and season with salt, pepper, and basil. Mix the minced meat with the diced onion and 100g grated mozzarella, and stuff the tomatoes into the mixture. Spread the remaining mozzarella over the tomatoes. Bake in the oven at 200°C (convection oven) for about 30 minutes. Puree the reserved tomato paste and bring to a boil in a saucepan. Season to taste with spices, basil, and vegetable stock. Finally, stir in the crème fraîche and bring back to a boil briefly. Serve the stuffed tomatoes with the sauce. Rice makes a great side dish.
