Stuffed zucchini rolls

Ingredients for 4 servings:

  • 3 m.-large zucchini
  • 250 g minced meat, mixed
  • 1 small onion(s)
  • 1 garlic clove(s)
  • some salt
  • some pepper, from the mill
  • some paprika powder, sweet
  • 100 ml cream
  • 100 ml sauce (Salsa Texicana)
  • some cheese, grated (Emmental)
  • some butter for the mold
  • some parsley for sprinkling

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 35 minutes; Total time approx. 50 minutes

Wash and dry the zucchini, and cut into approximately 3 cm thick slices. Hollow out the zucchini slices and place them in a buttered baking dish. Place the ground beef in a bowl. Finely dice the onion and garlic and add them. Season with salt, pepper, and paprika. Mix everything well and fill the hollowed-out zucchini rolls. Mix the cream and salsa and pour over the zucchini. Sprinkle some grated cheese on the zucchini. Bake in an oven preheated to 180°C (top/bottom heat) for approximately 30-35 minutes. Remove from the oven and sprinkle with parsley. Serve with baguette, if desired.
