Onion cake "Three kinds"

Ingredients for 1 servings:

  • 250 g spelt flour
  • 1 tsp, heaped dry yeast
  • 1 pinch(s) of sugar
  • 1 tbsp oil
  • 1 egg(s)
  • some salt
  • 80 ml milk, lukewarm
  • 350 g onion(s)
  • 350 g onion(s), white, sweet
  • 1 bunch of spring onions
  • 50 g butter
  • 100 g crème fraîche
  • 75 g yogurt
  • 2 eggs
  • 2 tbsp flour
  • Salt and pepper, from the mill
  • n. B. Caraway
  • 75 g diced ham
  • Fat for the mold
  • 2 tbsp breadcrumbs for the mold

Instructions

Working time approx. 30 minutes; Rest time approx. 1 hour; Cooking/baking time approx. 40 minutes; Total time approx. 2 hours 10 minutes

Something different with three types of onions

For the dough, mix the flour, yeast, sugar, and salt. Add the egg, milk, and oil and knead into a smooth dough. Let the dough rise for about an hour. Peel the onions and dice them not too finely. Trim, wash, and slice the spring onions. Heat the butter in a pan and sauté the white and yellow onions for about 10 minutes. Let cool. Mix together the crème fraîche, yogurt, eggs, flour, and spices. Mix in all the onions, including the spring onions. Grease a tart or springform pan (28 cm diameter). Roll out the dough thinly, place it in the pan, and create a raised edge of about 3 cm. Spread the breadcrumbs over the dough base and add the onion mixture. Sprinkle the ham cubes on top. Bake in an oven preheated to 200 °C (top and bottom heat) for about 30 minutes.
