Smoked mackerel on a bed of vegetables and potatoes à la Didi

Ingredients for 2 servings:

  • 250 g smoked mackerel(s) , skinned and boned
  • 2 tbsp butter
  • ½ lemon(s)
  • 100 g potatoes
  • 100 g vegetables (Asian vegetables)
  • 1 tsp herbal salt
  • 1 pinch(s) pepper, white
  • 1 m.-large shallot(s)

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 20 minutes

Peel the potatoes, cut them into small cubes, and place them in water to prevent them from browning. Peel and dice the shallots. Heat a pan with butter and fry the diced potatoes for 2 minutes. Add the Asian vegetables and the diced shallots. Season with salt and pepper, and drizzle with lemon juice. Cook with the lid on for 4 minutes. Place the smoked mackerel next to the vegetables in the pan and cook with the lid on for 1 minute. Arrange the mackerel on top of the vegetables and serve.
