Baked schnitzel with walnuts

Ingredients for 4 servings:

  • 4 veal escalopes or turkey escalopes or chicken breast fillet
  • 2 cups of cream
  • 200 g cheese, e.g. Emmental, grated
  • 200 g walnuts
  • 1 bunch of parsley
  • 2 cloves garlic
  • nutmeg
  • salt and pepper

Season the schnitzel or chicken breast fillet lightly, sear briefly on both sides, and place it in a baking dish (it should have a slightly higher rim). Mix the cream with grated cheese, chopped walnuts, crushed garlic, and chopped parsley in a bowl. Season with nutmeg, salt, and pepper to taste. Pour the mixture over the schnitzel and bake in a preheated oven at 180°C (350°F) for about 20 minutes (I would add 5 to 10 minutes for veal schnitzel). This is easy to prepare ahead of time for guests—the baking dish with the meat and sauce can be refrigerated until guests arrive, and only then can it be placed in the oven to bake. Serve with rice—but the highlight is Uncle Ben’s 5-grain blend.
