Ingredients for 1 servings:
- 100 g butter, melted
- 120 g sugar
- 2 m.-sized eggs
- 1 pack of vanilla sugar, or 2 tbsp homemade vanilla sugar
- 1 pinch of salt
- 2 tbsp rum
- 200 g flour
- 2 tbsp, leveled baking powder
- 500 g apples, e.g. Elstar
- 2 small eggs
- 80 g sugar
- 20 g butter
- Fat, for the shape

Working time approx. 30 minutes; Cooking/baking time approx. 40 minutes; Total time approx. 1 hour 10 minutes
My children’s favorite birthday cake
Cream the butter, sugar, and eggs until fluffy. Add the vanilla sugar, salt, and rum. Combine the flour and baking powder and stir into the batter. Peel and core the apples, cut them into small pieces, and stir them into the batter. Grease a 26cm springform pan and pour the batter into it. Bake at 200°C or gas mark 3 for about 20 minutes. Gently heat the remaining 20g of butter until it melts. Cream together with the eggs and sugar until fluffy and pour over the hot cake. Bake for another 20 minutes until golden brown. Allow the cake to cool in the pan.
