Ingredients for 1 servings:
- 175 g butter or margarine
- 175 g sugar
- 1 packet of vanilla sugar
- 3 eggs
- 250 g flour
- 25 g cornstarch
- 1 tsp, leveled baking powder
- 1 pinch of salt
- ½ tbsp milk
- 1 dashes of sparkling mineral water
- 1 m.-sized apple, e.g. Boskoop or similar varieties
- 1 tsp, heaped cinnamon
- 4 tbsp sultanas
- Fat, for the shape
Instructions
Working time approx. 20 minutes; Cooking/baking time approx. 50 minutes; Total time approx. 1 hour 10 minutes
Cream the butter until fluffy. Gradually stir in the sugar, eggs, flour, cornstarch, baking powder, salt, milk, and sparkling water. Peel and core the apple, and cut into small pieces. Stir the apples, cinnamon, and sultanas into the batter. Grease a loaf pan and pour in the batter. Bake the cake at 175°C (350°F) on the middle shelf of the oven for about 50 minutes, then remove and let cool. This is my favorite sponge cake recipe, which I adapt often—but the apple and cinnamon version takes the absolute top spot!
