Cauliflower mince "hedgehogs"

Ingredients for 4 servings:

  • 2 heads of cauliflower, small
  • 400 g organic minced beef
  • ¼ tube(s) Tomato paste
  • salt and pepper
  • 100 g garlic butter
  • 2 tbsp water
  • breadcrumbs

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 40 minutes; Total time approx. 1 hour

Cauliflower stuffed with ground beef

Remove the leaves from the cauliflower and pre-boil in salted water for about 5-10 minutes, if desired. Season the ground beef with salt and pepper to taste. Then combine with 2 tablespoons of water, the tomato paste, and about 25g of the garlic butter. Mix well. Alternatively, you can prepare it as you would with classic meatballs, but I prefer the classic flavor with a little garlic. Now carefully remove some of the stems from the bottom of the cauliflower and then fill the cauliflower with the ground beef mixture. If any florets fall off, you can simply “glue” them back in. After filling, turn the cauliflower over and brush with about 50g of melted garlic butter. Sprinkle breadcrumbs over the beef. If you have any leftover ground beef, you can add a little head to the outside of the cauliflower. This is how the name “Hedgehog” came about during the first preparation. Bake for about 20 minutes at 200 degrees Celsius (400 degrees Fahrenheit) top/bottom heat, as low as possible, and then sprinkle the remaining butter over the top. Return to the oven for another 10 minutes. Turn off the oven and leave the hedgehogs in the oven for another 5 minutes. Cut in half to serve. Anything your heart desires is a good side dish.
