Italian Maultaschen salad

Ingredients for 4 servings:

  • 12 Maultaschen
  • 1 kg tomatoes, colorful
  • 250g mozzarella
  • 1 handful of basil leaves
  • 6 tbsp balsamic vinegar, dark
  • 1 tsp honey
  • 8 tbsp olive oil
  • salt and pepper
  • 100 g pine nuts

Instructions

Working time approx. 25 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 40 minutes

Fry the Maultaschen in a hot pan in a little olive oil. Meanwhile, wash the tomatoes and slice them along with the drained mozzarella. Place the basil leaves in a tall bowl with the vinegar, honey, olive oil, salt, and pepper and briefly puree with a hand blender. Pour the dressing over the tomato and mozzarella salad. Slice the Maultaschen and toss into the salad. Lightly toast the pine nuts and sprinkle over the salad.
