Pasta salad with tomato and mozzarella

Ingredients for 6 servings:

  • 1 kg tomatoes
  • 500 g spirals
  • 4 mozzarella
  • 3 basil, frozen
  • 3 onions, diced
  • 6 tbsp balsamic vinegar
  • 10 tbsp olive oil
  • 1 tsp mustard
  • Sugar
  • salt and pepper
  • lemon juice
  • Herbs of your choice

Instructions

Working time approx. 35 minutes; Total time approx. 35 minutes

Cook the pasta until al dente. In the meantime, prepare a vinaigrette with oil, balsamic vinegar, mustard, sugar, salt, and pepper. Add the diced onions and let it simmer for at least an hour (this will reduce the spiciness). Peel the tomatoes, removing the insides and finely chop them. Dice the mozzarella. Combine all ingredients and serve.
