Ingredients for 4 servings:
- 8 slices of farmhouse bread
- e.g. lard (greaves)
- 1 onion(s)
- 1 sausage (Schwälmer red sausage – Stracke)
Instructions
Working time approx. 15 minutes; Rest time approx. 10 hours; Cooking/baking time approx. 15 minutes; Total time approx. 10 hours 30 minutes
Spread the bread slices generously with the lard. Dice the onions and divide them between 4 slices. Remove the sausage from its skin, cut them into slices, and place them on top of the onions. Now place the other slices of bread on top. This will make 4 double loaves, which you then wrap individually in a sheet of greaseproof paper and weigh down overnight. I always use a roasting pan and fill it with water. The next day, unwrap the loaves and fry or bake them in a pan or in the oven at 180°C until golden brown. They are absolutely delicious, whether hot or cold. A pickled cucumber and a cool blonde beer go perfectly with them.
