Ingredients for 2 servings:
- 4 slices of white bread, e.g. ciabatta
- some butter
- some olive oil
- 120 g ricotta
- 2 tbsp basil, freshly chopped
- 1 large beefsteak tomato(s)
- ½ ball of mozzarella
- salt and pepper

Working time approx. 15 minutes; Cooking/baking time approx. 5 minutes; Total time approx. 20 minutes
Quickly made sandwich, ideal for using up leftovers
Preheat the griddle. You can also cook the sandwiches in a pan (grill), then heat the pan. Place the slices of bread on the work surface and spread a thin layer of butter on one side and drizzle with a little olive oil. Then turn the slices over. Mix the ricotta, basil, salt, and pepper in a small bowl. Place some mozzarella and a few tomato slices on two slices of bread. Lightly season with salt and pepper. Dollop the ricotta over the remaining two slices of bread and spread it evenly. Fold the sandwich halves together and place them on the griddle or in a warm pan and cook until golden brown. Remove from the grill or pan, cut the sandwich in half, and serve. Tip: I can secure the top plate on my griddle so the sandwich doesn’t get flattened.
