Baked Maultaschen with chorizo ​​and mascarpone

Ingredients for 2 servings:

  • 6 Maultasche(s) (approx. 360 g) from the refrigerated section or homemade
  • 1 cup mascarpone (approx. 250 g)
  • 1 can of chopped tomatoes (425 g)
  • 1 tbsp tomato paste
  • 1 m.-large onion(s), red
  • 100 g paprika sausage (chorizo)
  • 100 g cheese (e.g. Emmental, Gouda, Parmesan or mixed), grated
  • ½ tsp oregano
  • salt and pepper
  • 1 pinch(s) of sugar

Preheat the oven to 180°C (top/bottom heat). Cut the Maultaschen into strips (about the size of your little finger) and place them in a baking dish. Preheat a non-stick pan over medium heat. Peel, quarter, and slice the onions, and dice the chorizo. Important: If the chorizo ​​is very soft, only cut with a sharp knife (!). Don’t press too hard, or it will fall apart. Add the sausage and onions to the pan and fry. No need to add any oil or fat; the sausage provides enough. When the onions and chorizo ​​are fragrant and lightly browned, add the tomato paste and let it sizzle for about a minute (this eliminates some of the acidity and adds additional roasted flavors). Then add the mascarpone and tomatoes. Mix everything well and season to taste. Spread the prepared sauce over the sliced ​​Maultaschen and sprinkle with cheese. Then bake everything for 20-30 minutes (depending on the cheese used, keep an eye on it) at 180°C on the middle rack.
