Minced meat pan with chard and feta cheese

Ingredients for 2 servings:

  • 300 g minced beef or tartar
  • 1 small chard
  • 3 large tomatoes
  • 1 pack of feta cheese
  • 100 ml vegetable stock
  • 100 ml red wine
  • 1 small onion(s)
  • some olive oil
  • possibly herbs, Italian
  • salt and pepper

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 40 minutes

Glycemic index, low carb

Remove the leaves from the chard stems and finely chop the leaves. Slice the stems into small diamond shapes, dice the onion, and finely chop the tomatoes. Set everything aside. Heat the olive oil in a pan. Once hot enough, sauté the onion until translucent. Crumble the ground beef into the pan and sear. Add the chard stems and sear well. Deglaze everything with vegetable stock and red wine. Simmer for 15-20 minutes over medium heat with the lid closed. Then add the chard leaves and tomatoes and cook for another 5 minutes. Season everything with salt, pepper, and the Italian herbs to taste. Crumble the feta cheese over the ground beef pan. Heat for 1-2 minutes and stir well. Serve with rice or baguette (but then the dish is no longer low-carb).
