Roulades with spring onions and feta cheese

Ingredients for 4 servings:

  • 1 clove(s) garlic
  • Mustard
  • 4 beef roulades
  • salt and pepper
  • 4 spring onions
  • 1 bell pepper(s), red
  • 75 g sheep’s cheese
  • Herbs of Provence
  • oil
  • 250 ml beef broth, hot
  • 250 ml red wine
  • 1 cup of crème fraîche, approx. 150 – 200 g
  • Sugar

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 1 hour 40 minutes; Total time approx. 2 hours

Finely chop the garlic clove and mix with the mustard. Season the roulades with salt and pepper and brush with the garlic mustard. Cut the spring onions and bell pepper into strips and arrange them over the meat. Crumble the feta cheese over the meat. Sprinkle each with a pinch of Provençal herbs. Roll up the roulades and secure with roulade pins. Brown them all over in hot oil, then pour in the hot stock, cover, and braise for about 90 minutes. Turn the roulades twice during the braising time, adding the red wine as they do so. At the end of the cooking time, stir in the crème fraîche and season the sauce with sugar, salt, and pepper.
