Baked gyros with peppers and mushrooms

Ingredients for 4 servings:

  • 3 bell peppers
  • 200 g mushrooms, fresh
  • 1 kg pork (gyros), seasoned
  • 3 tbsp sauce (Mexicana salsa)
  • 3 tbsp tomato paste
  • 4 tbsp crème fraîche, or sour cream
  • 200 g cheese (Gouda), grated

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 50 minutes

Preheat the oven to 200°C (175°C fan-assisted oven). Cut the bell peppers into thin strips. Clean and wash the mushrooms. Halve or quarter large ones if necessary. Heat oil in a pan. Brown the bell peppers and mushrooms on all sides for about 3 minutes, then remove. Brown the meat in batches in the frying fat for 5-6 minutes on all sides. Mix the meat, bell peppers, and mushrooms in the pan with the sauce and tomato paste and bring to a boil. Stir in the sour cream. Transfer the gyros to a baking dish. Sprinkle with cheese and bake in the oven for about 10-20 minutes until golden brown.
