Ingredients for 4 servings:

  • 1 small onion(s)
  • 25 g flour
  • ½ liter of milk or other liquid (e.g. vegetable or meat broth, fish stock)
  • salt and pepper
  • nutmeg
  • Worcestershire sauce

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 35 minutes

Peel the onion and dice finely. Lightly fry the flour in a saucepan without fat for 2 minutes. Add the finely diced onion and fry with the flour for about 1 more minute. Remove the pan from the heat and let the flour cool for about 2 minutes. Pour the cold liquid into the flour and onion mixture and whisk until smooth. Bring the mixture to a boil, stirring constantly with a flat wooden spoon, and simmer gently for about 10 minutes. Season the sauce to taste with the spices and a dash of Worcestershire sauce. Then, using a hand blender, blend until creamy. You can choose the liquid to suit the dish. I’ve tried several variations and the sauce tasted delicious every time.
