Ingredients for 2 servings:
- 100 g asparagus, white
- 3 egg whites, hard-boiled
- 4 slices of cooked ham
- 1 bunch of parsley
- 2 spring onions
- 3 egg yolks, hard-boiled
- 1 tbsp mayonnaise
- 1 cup of natural yogurt, 150 g each
- n. B. Salt
- n. B. Pepper, freshly ground
- n. B. Nutmeg
- n. B. sugar
- n. B. Stock (asparagus cooking water)
- ½ tbsp Dijon mustard
- ½ tbsp horseradish

Working time approx. 10 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 20 minutes

Peel the asparagus and cook until al dente. Cut into approximately 4 cm long pieces and place in a salad bowl. Dice the egg whites and cooked ham. Chop the parsley and slice the spring onions. Add everything to the asparagus. Make a dressing with the remaining ingredients and fold it into the salad ingredients. Serve with crusty baguette.
