Asparagus salad à la Aunt Dina

Ingredients for 2 servings:

  • 100 g asparagus, white
  • 3 egg whites, hard-boiled
  • 4 slices of cooked ham
  • 1 bunch of parsley
  • 2 spring onions
  • 3 egg yolks, hard-boiled
  • 1 tbsp mayonnaise
  • 1 cup of natural yogurt, 150 g each
  • n. B. Salt
  • n. B. Pepper, freshly ground
  • n. B. Nutmeg
  • n. B. sugar
  • n. B. Stock (asparagus cooking water)
  • ½ tbsp Dijon mustard
  • ½ tbsp horseradish

Working time approx. 10 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 20 minutes

Peel the asparagus and cook until al dente. Cut into approximately 4 cm long pieces and place in a salad bowl. Dice the egg whites and cooked ham. Chop the parsley and slice the spring onions. Add everything to the asparagus. Make a dressing with the remaining ingredients and fold it into the salad ingredients. Serve with crusty baguette.
