Ingredients for 1 servings:

  • 1 serving of okara made from 100 g of soybeans
  • 3 eggs
  • 1 packet of baking powder
  • 45 g psyllium husk flour
  • 40 g chia seeds or flax seeds
  • 40 g seeds or kernels
  • ½ tsp salt

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 1 hour; Total time approx. 1 hour 15 minutes

Whisk the eggs, salt, and okara thoroughly. Combine the folic acid flour, baking powder, and seeds, and stir into the okara mixture. Form rolls. Bake in an unheated oven at 160°C for one hour. The dough is enough for about three rolls or one baguette. It can also be used as a base for two round pizzas. Pre-bake the bases for 30 minutes, top with the toppings, and bake for another 30 minutes. Note: Okara is the leftover from making soy milk. This recipe also works with leftover nut or almond milk.
