Ingredients for 20 servings:

  • 20 cherry tomatoes
  • 1 bunch parsley, finely chopped
  • 1 lemon(s), zest
  • 3 tbsp olive oil
  • 150 g mozzarella, cut into fine cubes
  • Salt
  • Black pepper, freshly ground

Using a sharp knife, cut a small top off the tomatoes and hollow them out with a small spoon or tomato baller. Season the insides with salt and pepper, then place the tomatoes open-side down on a wire rack and let them rest for about 10 minutes. Combine the parsley, lemon zest, and olive oil, mix with the cheese cubes, and fill the tomatoes with the mixture. Thread the lollipops onto the skewers and serve decoratively in glasses. Tip: Depending on the size of the tomatoes, you can also use mozzarella balls.
