Lamb ribs

Ingredients for 4 servings:

  • 1.2 kg lamb ribs
  • 4 tbsp mustard
  • 2 garlic cloves
  • 4 tbsp fresh herbs (rosemary, marjoram, thyme, savory)
  • 3 juniper berries
  • 1 tbsp olive oil
  • salt and pepper
  • 100 ml cream or coffee cream
  • 1 tbsp flour

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 1 hour; Total time approx. 1 hour 20 minutes

Wash and dry the lamb ribs. Brown them well on all sides in a tablespoon of olive oil, then remove from the oven. Make a seasoning paste from the mustard, crushed garlic, finely chopped herbs, crushed juniper berries, salt, and pepper. Brush the lamb ribs with this paste. Place the ribs in an ovenproof dish and roast in the oven at 200°C for about 1 hour. Then remove and keep warm. Make a sauce from the stock. Drain the fat, deglaze with water, and thicken with cream and flour. Green beans and potatoes, or potato salad, go well as a side dish.
