Ingredients for 6 servings:
- 2 kg meat, kid in one piece
- 2 kg onion(s) (vegetable onions)
- 1 bulb(s) garlic
- 3 carrots
- 2 bay leaves
- 1 sprig(s) rosemary
- 300 g lard
- olive oil
- Water, cold
- pepper
- Salt
Instructions
Working time approx. 20 minutes; Total time approx. 20 minutes
Roughly dice the onions and carrots, add the unpeeled garlic cloves, and mix thoroughly. Pour plenty of cold water into the roasting pan. Add 1 tablespoon of salt and 1 tablespoon of pepper. Add the mixed vegetables and arrange the meat on top. The meat should be just covered with water. Add a generous splash of olive oil, the lard, bay leaves, and rosemary. Simmer in the oven at 200°C for 3 hours until it browns nicely. After 3 hours, turn the meat over and leave it in the oven for another 20 minutes.
