Cut the schnitzels into thin strips. Heat the oil in a pan and brown the meat. Finally, add the diced garlic and fry. Season with gyro seasoning, thyme, and salt. Dice the feta cheese. Finely slice the onion and mix it with the feta cheese and the meat. Let cool. Preheat the oven to 180 degrees Celsius (350 degrees Fahrenheit). Roll out the puff pastry and cut each into 6 squares. Separate the egg. Brush the edges of the pastry with egg white. Arrange the gyro on top. Fold the pastry squares together to form corners and press down lightly. Place on 2 baking sheets lined with parchment paper. Whisk the egg yolk with 1 tablespoon of water. Brush the mixture over the parcels. Crumble the feta cheese and sprinkle it over the parcels along with the sesame seeds. Bake for about 20-25 minutes. The parcels are delicious cold or warm. They can be easily reheated in the microwave. Serve with a mixed or Greek salad. For 12 pockets, as a main course for 4 people.
