Red cabbage stew

Ingredients for 4 servings:

  • 2 large apples
  • 2 onions
  • 4 Mettenden or equivalent roast leftovers
  • 400 g red cabbage
  • 1 tsp, leveled caraway seeds
  • 1 tbsp lard
  • 1 liter of broth
  • Sugar
  • salt and pepper

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 45 minutes

Peel and core the apples, and cut into small pieces. Roughly chop the onions and finely chop the Mettenden sausage or roast leftovers. Sauté everything in a pan with lard. Then add the red cabbage and caraway seeds, top up with broth, and simmer for about 30 minutes. Finally, season with salt, pepper, and sugar. Serve with fresh bread.
