Gnocchi in vegetable sauce with sheep's cheese wrapped in bacon

Ingredients for 4 servings:

  • 1 onion(s)
  • 2 bell peppers, red and yellow
  • 1 zucchini
  • 3 m.-sized carrot(s)
  • 100 ml tomato sauce
  • Rosemary, dried
  • oregano
  • vegetable broth
  • 2 tbsp flour
  • 200 ml water
  • oil
  • 1 kg gnocchi
  • 2 packs of feta cheese
  • 150 g Black Forest ham
  • salt and pepper

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 55 minutes

Finely dice the onion. Finely chop the vegetables. Add the oil to a large pan and fry the onion, rosemary, and oregano until hot. Add the vegetables and fry briefly. Deglaze with the stock and tomato sauce. Pour in enough stock to cover the ingredients. Simmer over medium heat until the vegetables are tender. Mix the flour with the water and stir into the sauce until smooth. Stir constantly, otherwise lumps will form. If it is too runny or thick, add more flour mixture or water. Cook the gnocchi according to the instructions. Cut the feta cheese into 2 cm thick blocks and wrap them in the prosciutto. Fry them in a little oil until the prosciutto is nice and crispy. Stir the gnocchi into the sauce and let it marinate briefly. Season with salt and pepper. Serve with the ham rolls.
