Paprika schnitzel with marinated boiled potatoes

Ingredients for 4 servings:

  • 8 small pork schnitzels
  • 2 large onions, finely diced
  • 4 red bell peppers, cut into fine strips
  • 600 g waxy potatoes, peeled and quartered
  • salt and pepper
  • Paprika paste
  • Butter for frying

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Cook the potatoes, drain, and let them cool. Pound the schnitzel, season with salt and pepper, and fry slowly in plenty of melted butter. Add the onions and bell peppers and sauté. Season with hot paprika (or tomato paste if you don’t have it) and hot paprika. Add the potatoes to the pan. Close the lid and shake the pan to allow the potatoes to absorb the butter. Serve with a fresh salad.
