Ingredients for 1 servings:

  • 2 ½ kg grapes, blue
  • 100 ml water
  • 250 ml red wine, dry
  • 250 g brown sugar
  • 1 star anise
  • ½ vanilla pod(s)
  • ½ stalk(s) cinnamon
  • 0.7 liters of brown rum, 40%

Instructions

Working time approx. 1 hour; Cooking/baking time approx. 30 minutes; Total time approx. 1 hour 30 minutes

Mash the grapes and simmer with the water for about 10 minutes, then let cool. Strain the grapes through a sieve and collect the juice (about 1.5 liters). Bring the red wine to a boil with the scraped vanilla seeds, the pod, the sugar, and the remaining spices. Then add the grape juice and bring back to a boil. Let cool, then add the rum. Transfer to a large container, seal tightly, and store in a cool, dry place.
