Ingredients for 2 servings:

  • 300 g tartar, freshly minced
  • 1 red bell pepper(s)
  • 1 stalk(s) leek
  • 2 baby bananas
  • 1 bunch coriander leaves, large bunch, chopped
  • 2 tbsp tomato paste
  • 2 tbsp sugar or sugar substitute of your choice
  • 3 tbsp lemon juice, freshly squeezed
  • 3 tbsp soy sauce, dark
  • 2 clove(s) garlic, squeezed
  • n. B. salt and pepper, black
  • some cayenne pepper
  • 1 tbsp virgin coconut oil

Working time approx. 10 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 25 minutes

Wash the bell peppers and leeks and cut them into bite-sized strips or rings. Mix the soy sauce, tomato paste, sugar, lemon juice, and crushed garlic, and season with cayenne pepper. Heat the coconut oil in a pan and fry the tartar until crumbly. Then add the vegetables and spice mixture and mix. After just two minutes, add the peeled baby bananas to the pan and cook everything over low heat for another five minutes. If desired, you can add salt and pepper to taste, but I never do, as I don’t think it’s necessary. Basmati rice is delicious with this.
