Gerald's horseradish mustard

Ingredients for 1 servings:

  • 150 g mustard powder, yellow
  • 50 g mustard powder, black
  • 300 ml white wine vinegar
  • 100 ml white wine
  • 150 g horseradish, freshly grated
  • 2 tbsp honey
  • 1 pinch of salt
  • n. B. herbs, (e.g. herbs of Provence)

Instructions

Working time approx. 30 minutes; Rest time approx. 12 hours; Total time approx. 12 hours 30 minutes

Sweet and spicy horseradish mustard

Blend all ingredients thoroughly and for a long time, or even better, blend with a hand blender. For at least 10 minutes! Cover with a kitchen towel and let stand overnight – the mustard only develops its characteristic flavor with the oxygen from the air! Blend again thoroughly the next day to ensure that the swollen herbs are finely chopped. If necessary, adjust the consistency with vinegar and wine – mustard flour sometimes absorbs more, sometimes less liquid. Place in thoroughly sterilized jars and store in a cool, dark place for about 3 weeks. Then taste…
