Rinse the basil and pat dry, place it in a jar, and fill with white wine vinegar. Seal the bottle. Let the vinegar stand in a well-chilled place for at least 14 days. The vinegar will turn red, which is completely normal. Then filter, pour into prepared bottles, seal, and store in a cool place. The basil vinegar is especially delicious with tomato salad, green salad, and eggplant dishes.
