Ingredients for 10 servings:

  • 15 tbsp ketchup
  • ½ onion(s)
  • 1 tbsp tarragon, dried
  • 1 shot of vinegar
  • 2 garlic cloves
  • 1 tsp mustard (herb mustard)
  • 1 pinch of salt
  • 1 pinch(s) of sugar
  • Parsley

Working time approx. 15 minutes; Total time approx. 15 minutes

Finely grate the onion, not chop or slice it. The small hooks of a cheese grater are ideal for this. Grind the tarragon in a mortar and pestle; if you don’t have one, the rounded end of a caipirinha pestle also works wonderfully in a cereal bowl. Peel and press the garlic cloves, or chop them very finely. Mix all ingredients together. You can, of course, vary the amount of ketchup according to your taste.
