Ingredients for 5 servings:
- 1 m.-large zucchini
- 2 tbsp salt
- 2 anchovies
- 2 tbsp olive oil
- 1 cup buttermilk
- 1 cup whipped cream
- 1 large onion(s)
- 3 gherkins
- 1 m.-sized carrot(s)
- 1 handful of peas, frozen
- 1 tsp, heaped dill, fresh
- 1 m.-sized apple
- pepper
- Paprika powder
- 1 bay leaf
- allspice powder
- 1 dashes balsamic vinegar

Working time approx. 1 hour; Rest period approx. 2 days; Total time approx. 2 days 1 hour

Wash and peel the zucchini, and cut into thin strips, similar to herring. Rub with salt and place in a covered container with the finely chopped anchovies and oil in the refrigerator for about 12-24 hours. The next day, separate the zucchini and anchovies from the salt and oil mixture. Reserve the marinade for now. Blanch the carrots and peas, and cut the apple and carrots into small pieces. Place the zucchini and anchovies in a bowl and layer/mix with the remaining ingredients. Season generously like herring, a traditional German dish, and season to taste. Add a little more of the marinade, if desired. Let everything sit overnight and serve with boiled potatoes.
