Pork fillet with maple syrup glaze

Ingredients for 2 servings:

  • 200 g pork fillet(s)
  • 100 ml maple syrup
  • 3 tbsp Dijon mustard
  • 2 tbsp soy sauce
  • 1 pinch of cinnamon
  • salt and pepper

Instructions

Working time approx. 15 minutes; Rest time approx. 12 hours 10 minutes; Cooking/baking time approx. 40 minutes; Total time approx. 13 hours 5 minutes

For the glaze, combine 1 dl maple syrup with 3 tbsp Dijon mustard, 2 tbsp soy sauce, a pinch of cinnamon, salt, and pepper. Let the pork tenderloin rest in the glaze overnight. The next day, sear it briefly on all sides in a frying pan. Then place it in an oven preheated to 160°C (320°F) for about 30 minutes. Remove and let rest for 10 minutes before carving.
