Pasta with yogurt and fried onions

Ingredients for 2 servings:

  • 60 ml oil
  • 4 garlic cloves, chopped
  • 2 onions, chopped
  • ½ tsp cinnamon, freshly ground
  • ½ tsp coriander, freshly ground
  • ¼ tsp nutmeg, freshly grated
  • 5 cardamom pods, green, freshly ground (the inner seeds, or sieve)
  • 1 lime(s), the juice
  • Salt and pepper, black, freshly ground
  • some chili powder
  • 250g pasta
  • 300 ml yogurt (e.g. Greek)
  • Salt and pepper, black, freshly ground (for the yogurt)
  • 1 tsp sumac (for the yogurt)
  • 2 tbsp mint, chopped

Heat the oil and fry the onions over medium heat until soft and golden. This will take about 10-15 minutes. When they are almost done, add the garlic and fry for a little longer. Season with cinnamon, coriander, nutmeg, cardamom, salt, pepper, chili, and lime juice, mix well, and set aside. Meanwhile, cook the pasta. Mix the yogurt with the salt, pepper, and sumac. Finely chop the mint. To serve, divide the pasta between two plates. Spoon over the yogurt, then the onion mixture, and finally scatter over the mint. If there is any oil left over, drizzle over the dish and serve.
