Baked Mice – Donuts

- 40 g Sugar
- 15 g Yeast fresh
- 200 g Flour
- 30 g Butter
- 1 piece Organic egg
- 0,25 teaspoon Salt
- Frying oil
- Powdered sugar
- Weigh all ingredients and put them ready. Warm the milk to lukewarm.
Pre-dough yeast start-up
- Crumble the yeast in about 1/3 of the warmed milk and stir until it is dissolved, add 1 teaspoon of sugar and 2 tablespoons of the weighed flour and stir. Cover and let rise in a warm place for 30 minutes.

- Put the flour in a bowl, add the remaining milk, egg, salt, sugar and butter, everything should be room temperature. Then add the yeast and stir well with the dough hook. Since I had an L-egg, I added 1 additional tablespoon of flour. Dust the dough with flour and cover the bowl and let it rest in a warm place (next to a heater) for two hours.
- When the batter has doubled, stir briefly. Heat the oil in the deep fryer. The dough is very soft, remove with a tablespoon of dough and bake in the hot fat (140 degrees) until golden brown, turn, then drain on kitchen paper.
- Dust with icing sugar while it is still hot. Simply delicious!
