Ingredients for 1 servings:

  • 2 tsp cocoa powder
  • 2 tsp peppercorns, black
  • 1 tsp fennel seeds
  • 1 tsp ginger powder
  • 1 tsp cardamom
  • 1 tsp cinnamon
  • 4 bay leaves
  • ½ tsp clove powder
  • 1 tsp salt

Instructions

Working time approx. 5 minutes; Total time approx. 5 minutes

Dry marinade for game

Combine all ingredients and crush in a mortar or, even better, grind finely in a blender. Transfer to a shaker. Rub the marinade onto game (e.g., venison schnitzel) and let it work for a short time. The spice mix can also be used for a sauce. I haven’t used it for other types of meat yet.
