Pickled matjes – great for New Year’s Eve or as a hangover breakfast

We always have this as a base for New Year’s Eve dinner. Leftovers also make a great hangover breakfast (even during Carnival season). Pour some oil into an oval bowl and add a bay leaf, 3 juniper berries, and 2 allspice berries. Peel the onions and slice them into roughly 5 mm wide rings. Spread the herring fillets thickly with mustard and cut them into bite-sized pieces. Layer them alternately with the onions and the remaining spices in the bowl. Finally, drizzle with enough oil to cover everything. Cover with foil and let stand in a cool place for at least 8 hours before serving. Serve with fresh farmhouse bread and a cold beer. Tip: This recipe can, of course, be expanded at any time.
