Ingredients for 5 servings:
- 5 salted herring(s) (whole herring or gutted salted herring)
- 2 bay leaves
- 15 grains of allspice
- 10 peppercorns
- 1 large onion(s)
- 3 gherkins
- Pepper, ground
- Vinegar

Soak the herring for a day. The next day, fill a large bowl about halfway with water and season with vinegar essence or vinegar. Thinly slice the onions and cucumbers and add them with the spices. Cut the heads off the gutted herring, halve the herring, and add them to the bowl. The fish should be covered with water. Add a little more water if necessary. The brine should be well acidic so that the fish have enough acidity later. Leave to stand in a cool place for about a week, by which time the herring will be well marinated. Tip: If you use whole herring, don’t throw away the roe, but add it to the bowl; it tastes just as good as the expensive stuff from the fish shop.
