Ingredients for 2 servings:
- 175 g zucchini
- ½ onion(s)
- 250 g tomatoes, pureed
- 125 g cottage cheese
- 150 g herb cream cheese
- 1 ½ tbsp milk
- 4 lasagna sheets
- Gouda, grated
- Salt
- pepper
- Paprika powder
Instructions
Working time approx. 20 minutes; Cooking/baking time approx. 40 minutes; Total time approx. 1 hour
Slice the zucchini and finely dice the onion. Sauté the onions in oil until golden brown, add the zucchini and the passata, and season with salt, pepper, and paprika. Simmer everything over medium heat for four to five minutes and stir in the cottage cheese. Mix the cream cheese with the milk. In a baking dish, alternate layers of cream cheese sauce, lasagna sheets, and tomato sauce, finishing with the tomato sauce. Sprinkle the Gouda cheese on top and bake in the oven at 200°C for 40 minutes.
