Feta and tomato gratin

Ingredients for 4 servings:

  • 300 g feta cheese (I always use Greek sheep’s milk)
  • 1 kg tomatoes
  • 1 bunch of parsley
  • ½ bunch thyme
  • 2 garlic cloves
  • 2 tbsp lemon juice
  • 4 tbsp olive oil
  • salt and pepper
  • some basil for garnishing

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Cut the feta into 0.5 cm thick slices. Slice the tomatoes as well. Finely chop the parsley, thyme, and garlic. Mix the herbs and garlic with the lemon juice, olive oil, salt, and pepper. Layer the cheese and tomato slices alternately in a shallow baking dish, then top with the feta. Brush each layer with the herb oil between layers. Bake in a preheated oven at 200°C for about 15 minutes. Garnish with basil.
