Ingredients for 1 servings:

  • 100 g breadcrumbs
  • 100 g flour
  • 1 tsp baking powder
  • 80 g xylitol (sugar substitute)
  • 100 g low-fat margarine
  • 1 m.-sized egg(s)
  • 20 g vanilla pudding powder
  • 50 g xylitol (sugar substitute)
  • 1 cup sour cream
  • 1 m.-sized egg(s)
  • 5 m.-sized apple
  • 80 g semi-skimmed margarine
  • 80 g breadcrumbs
  • 30 g xylitol (sugar substitute)
  • 1 tsp cinnamon

Working time approx. 35 minutes; Cooking/baking time approx. 45 minutes; Total time approx. 1 hour 20 minutes

For the dough: Mix the breadcrumbs, flour, baking powder, and sugar. Add the butter and egg and knead into a dough. Line the bottom of a springform pan with baking paper. Cover the pan with the dough, leaving a rim about 2 cm high. For the filling: Mix together the sour cream, egg, custard powder, and sugar. Peel, coarsely grate, or chop the apples, and stir in. Spread the mixture over the dough. For the crumble: Make a crumble from the breadcrumbs, sugar, margarine, and cinnamon and spread it over the filling. Bake in a preheated oven at 180°C (350°F) for 45 minutes. Let cool in the pan. The cake is not very sweet; the sugar can be doubled. Xylitol (sugar substitute) can, of course, be replaced with regular sugar. The low-fat margarine can also be replaced with margarine or butter. According to my recipe, the cake has 230 kcal per slice if cut into 12 slices.
