Onion and bacon butter

Ingredients for 1 servings:

  • 100 g bacon, cut into fine cubes
  • 150 g butter, mildly soured
  • 20 g onion(s), finely diced
  • 1 tbsp, heaped celery leaves, finely chopped
  • 1 tbsp, heaped lovage, finely chopped
  • n. B. smoked salt, alternatively table salt

Instructions

Working time approx. 10 minutes; Rest time approx. 1 hour; Cooking/baking time approx. 10 minutes; Total time approx. 1 hour 20 minutes

Fry the bacon in a pan. Add the diced onion and cook over medium heat, stirring frequently, until it begins to brown. Then let it cool to room temperature. Transfer to a mixing bowl and add the softened butter and chopped herbs. Blend with a mixer, then season with smoked salt and transfer to a small bowl. Cover and refrigerate for about 1 hour.
