Ingredients for 1 servings:
- 200 g onion(s), cut into fine rings
- 200 ml goose fat or clarified butter
- 20 g wheat flour
- 20 g powdered sugar
- 20 g sweet paprika powder
- 2 sprigs rosemary, finely chopped
Instructions
Working time approx. 10 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 20 minutes
Heat the lard in a 24cm skillet to 170-180°C. Meanwhile, prepare the flour and spice mixture in a bowl. Toss the finely chopped onion rings in this mixture. Sieve off any excess and discard. Deep-fry the onions in the hot fat, stirring frequently, until they begin to brown. Then remove them with a slotted spoon, drain the fat on kitchen paper, and let cool.
