Leberkäse with fried potatoes and onions

Ingredients for 3 servings:

  • 700 g jacket potatoes
  • 2 large spring onions
  • 3 onions
  • 3 slice(s) Leberkäse, coarse
  • Herb salt and pepper from the mill
  • Salt
  • some paprika powder, sweet
  • Clarified butter
  • 5 stalks parsley, chopped

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 50 minutes; Total time approx. 1 hour 20 minutes

To make the fried potatoes, boil the potatoes in salted water for about 25 minutes, ideally the day before. Once cooled, refrigerate. Peel the potatoes and cut into thick slices. Cut the spring onions into fine rolls. Heat the clarified butter in a pan and fry the potatoes. Add the white parts of the spring onions. Fry for about 20 minutes until golden brown, stirring occasionally. Finally, season with herb salt and pepper and add the green parts of the spring onions. For the onion rings, peel the onions and slice them into rings. Heat 20g of clarified butter in a pan and fry the onion rings until crispy, season with a little herb salt and paprika. Heat the clarified butter in a pan and fry the meatloaf slices on each side until crispy, season with paprika and pepper. Arrange the fried potatoes and meatloaf on hot plates, place the onions on top, and sprinkle with parsley.
