Potato pan with Landjäger

Ingredients for 2 servings:

  • 7 potatoes
  • 6 sausages (Landjäger)
  • 2 bell peppers
  • 1 jar corn, drained
  • 3 eggs
  • 2 tbsp parsley, chopped
  • Salt
  • pepper
  • Paprika powder
  • n. B. cheese, grated

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Wash and chop the parsley. Peel and slice the potatoes. Chop the Landjäger sausages. Wash, deseed, and slice the bell peppers. Brown the Landjäger sausages in a heated pan. Add the potatoes, season generously with salt and pepper, and cook over medium heat with the lid closed, turning frequently, for about 30 minutes. Then add the bell pepper strips and corn. Crack the eggs, season generously with paprika, whisk, and pour over the potato pan. Cover and let set over low heat for about 10 minutes. Just before serving, sprinkle the chopped parsley over the pan. Serve with grated cheese on the side.
