Almond-Cranberry-Wafers

Ingredients for 1 servings:

  • 200 g butter
  • 200 g almond(s), ground
  • 100 g powdered sugar
  • 5 eggs
  • 55 g flour
  • 1 pack of pudding powder, vanilla flavor
  • ½ pack of baking powder
  • 5 wafers, square3 (120 x 200)
  • 1 lemon(s), grated peel
  • 200 g cranberry compote
  • Cake icing (chocolate icing and some lemon icing)

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Cream the softened butter, then cream with the eggs and sugar until creamy, then stir in the flour mixed with baking powder, pudding mix, almonds, and lemon zest. Spread half of the batter into a prepared rectangular pan (mine is 25 x 28 cm), cover with wafer paper, spread with cranberries, and cover with more wafer paper. Spread with the remaining batter and bake in a preheated oven at 160°C (convection oven) for about 25 minutes. Once cooled, cover with the chocolate glaze and drizzle with the lemon glaze, then cut into slices.
