Streusel cake with peaches and skyr

Ingredients for 1 servings:

  • 150 g flour
  • 100 g sugar
  • 150 g butter
  • 100 g nuts, ground
  • 1 tsp baking powder
  • 1 can peach(s), approx. 820 g each
  • ¾ cup of Skyr, natural, approx. 450 g
  • 2 cups of cream, approx. 200 g each
  • n. B. sugar
  • 2 bags of vanilla sugar, n. B.

Instructions

Working time approx. 25 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 50 minutes

Make a crumble dough from flour, sugar, butter, nuts, and baking powder. Place 2/3 of the dough onto a springform pan lined with baking paper and press down firmly. Prick the dough several times with a fork. Crumble the rest of the crumble dough onto a baking sheet next to the springform pan and bake in a preheated oven at 175 degrees Celsius (350 degrees Fahrenheit) for 20-25 minutes. In the meantime, drain the peaches and slice them. Arrange the peach slices close together on the cooled base. Whip the cream, fold in the skyr, and refine the mixture with sugar and vanilla sugar to taste. Spoon the mixture onto the peaches and finally sprinkle with the prepared crumble. This amount makes about 14 cake slices.
