Mashed potatoes with fried onions and fried black pudding

Ingredients for 2 servings:

  • 600 g potatoes
  • 40 g butter
  • 50 ml milk
  • ½ tsp pepper
  • 2 tsp salt
  • 1 pinch of nutmeg
  • 2 m.-sized onion(s)
  • 1 tsp sugar
  • 300 g black pudding

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 40 minutes

Peel the potatoes, dice them, and place them in water to prevent them from browning. Boil the potatoes with a teaspoon of salt for 20 minutes, drain, and mash them. Add the butter and milk, and season with salt, pepper, and nutmeg. Mash the potatoes again, stir well, and keep warm until ready to use. Peel the onions and slice them into rings. Heat a pan with butter and fry the onion rings with a teaspoon of sugar. When the onions are lightly browned, remove them from the pan. Slice the black pudding and fry them in the same pan. Add the onion and heat through. Serve the mashed potatoes with the fried black pudding and fried onions.
