Ingredients for 4 servings:

  • 1 small onion(s)
  • 1 garlic clove(s)
  • 2 zucchinis
  • 2 bell peppers (red and yellow)
  • 2 small cans of tomatoes, chopped
  • 1 small can of tomato paste
  • salt and pepper

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 40 minutes

Sauté the onions in a little oil until translucent. Thinly slice the zucchini and thinly slice the bell pepper, and sauté both briefly. Add the canned tomatoes, finely chop the garlic clove, and add it. Simmer gently for 20-30 minutes. Depending on the consistency of the tomatoes, stir in tomato paste to thicken. Season with salt and pepper.
